Mexican Night

Mexican Rice with Fresh Tomatoes
1 T butter
1 T oil
1/4 c chopped onion
4 garlic cloves, minced
1 1/2 c uncooked white rice
1 tomato, diced
3 c chicken broth
1 t salt
1. Heat butter and oil in a medium saucepan over medium heat. Add teh onion and garlic and cook and stir until the onion is soft. Add the rice and stir until the rice browns a bit. Stir in the tomato, broth, and salt. Bring to a boil, cover, and decrease the heat to very low.
2. Simmer 15 to 20 minutes and serve immediately

Chicken Tacos
2 T butter
2 T oil
2 lbs boneless, skinless chicen breat, but into bite size pieces
3 T chopped onion
3 garlic gloves, minced
2 tomatoes, chopped
salt, pepper, garlic salt
12 tortillas
1. Heat th ebutter and oil in a med skillet over medium high heat. Add teh chicken and onions and cook and stir until onions are soft and the chicken is tender and no longer pink. Add teh garlic and cook about 1 minute more. Decrease the heat to low and stir in the tomato. Add water (or chicken broth) if th emixture seems too dry. Season generously with salt, pepper, and garlic salt. Continue cooking about 2 minutes. Cover and turn off the heat.
2. Place a small amount of th echicken mixture into tortilla shell.

Put cheese in a tortilla, roll it up, microwave for 10 seconds, and serve with salsa for dipping
tortilla chips dipped in salsa
I wonder how many servings of vegetables are in 1/4 c salsa.

Hawaiian Haystacks/Chinese Sundaes

1 c. uncooked rice (I will double this because I have a picky eater and this is all he'll eat for dinner)
1 lb. cooked, cubed chicken
1 can chow mein noodles
2 celery ribs, diced
1/2 c. almonds
1 can pineapple
2 cans mandarin oranges
1/2 c coconut
1 jar maraschino cherries, drained
1 can cream of chicken soup
1 c sour cream
1/2 c. milk
I am doing this different than the recipe says to. If you want the actual recipe leave a comment and I'll put it on here. I'm going to make it easier and less time consuming.
*My sister, Kris, told me you can put anything in a crock pot, so I'm going to put the cream of cihcken soup, sour creeam and milk into the crockpot with the FROZEN chicken 4 hours before dinner.
*Cook rice according to package directions. I'll put mine in the rice cooker at 4:20 so it's ready at the same time the chicken and sauce is ready
*Here's a trick I learned and I don't remember who taught it to me, but thank you!!!! To shred my chicken I throw it in the kitchen aide with the paddle and turn it on. Watch it until it's what you like.
*Place the noodles, celery, almonds, pineapple, orances, cocunut, and cherries in individual serving bowls
*Serve sauce over rice and let everyone add their toppings.
*Eat and enjoy!

wassail

I'm 6 months pregnant and have 2 boys (3 and 5 years old). They are very active and I'm so exhausted by the time they go to bed. This is my absolute favorite drink after a long day. I don't know what it is about wassail, but I feel refreshed after I drink it!
This recipe is from a friend of mine and I HAVE to share it!!!!

Wassail
2 qt. water
2 c. sugar
3 cinnamon sticks
1T cloves
2t nutmeg
1 gallon apple cider
2 qt. orange juice (pulp free)
1/2 c. lemon juice
*you will also need a cheese cloth bag*
1. Mix water and sugar together
2. place spices in cheese cloth bag and tie with a string. Add to water mixture and set a fork on the bag of spices so it can't float. Boil 15 minutes.
3. Stir bag around and remove.
4. Refrigerate overnight.
5. Add all juices to water mixture. Heat on the stove and serve warm

BBQ Chicken Pizza

Pizza Dough
1 T. yeast
1 c warm water
2 T olive oil
1 T. honey
1/4 t. salt
3 to 4 c flour
1. mix the yeast and water in a small bowl, cover, and let stand 5 minutes
2. Mix the oil, honey, salt and yeat mixture in a large mixing bowl. Add flour, 1 cup at a time. ONLY USE 3 C. of flour. if the dough seems wet, mix in more four 1/4 c. at a time.
3. Oil pizza pan and roll out to fit pan (I roll mine on my pan so I don't have to guess whether or not it'll fit)
BBQ Chicken Pizza
I changed the recipe a bit to what my family would like and it turned out GREAT!!!
3/4 lb chicken breast (cooked and cut up)
*I am not a fan of meat, so I used 1 chicken breast*
1 c. plus 2 T sweet bbq sauce (divided)
1/4 c shredded smoked Gouda cheese
*I do NOT like Gouda, so I just eliminated this from my pizza*
3 1/2 c. shredded mozzarella cheese
*I used about 1 1/2 c. of cheese*
1/4 c. thinly sliced red onion
1. preheat oven to 425 degrees
2. Mix the chicken with 2 T. BBQ sauce
3. Spread 1 c BBQ over pizza crust. Sprinkle with Gouda cheese and top with 3 c. of the mozzarella cheese *I lightly sprinkled some of the mozzarella on* Sprinkle the chikcen and onion over the cheese and top with remaining cheese.
4. Bake 15 minutes on the lowest oven rack.
I served a green salad and apples/dip with the pizza.
Fruit Dip
1 8oz pkg cream cheese
1 jar marshmallow cream
mix until fluffy. My 3 year old is trying to learn his colors, so I let him experiment with food coloring and we had ORANGE fruit dip! It was great because he learned something AND my picky little eater actually ate apples and dip:)

Beef Stroganoff

I guess I'm just going to post things that I make weather they have a recipe or not because most of them do not!! For the beef stroganoff boil noodles or you can put it over rice. I don't like hamburger very well so I don't put a lot in my meals. I know, poor Mike!!
1/2 lb. hamburger-brown, rinse and put back in pan. Then add
diced onions-cook till you like them, Then add
1 can cream of mushroom soup (don't try any other soup, it doesn't taste good!! I tried chicken and asparagas- not good!!
Sour cream- as much as you like
garlic salt
Cook it till it's warm and you're done! It's easy to make and easy to clean up too!!

one for the pot

The crock pot that is!!! I've been REALLY bad at updating this blog! Actually, I've been bad at updating any blog of mine!! I've decided I'm a better cook without a recipe and so I tend to throw things in and call it dinner! The other night I was throwing in and it turned out pretty darn good!! So, here's what I did:
1 can cream of chicken soup
some salsa-I'd say maybe 1 cup
peppers- I did red, orange and yellow
onions
chicken
I cooked it in my crockpot for about 4 hours and served it over rice. It had really good flavor!!

I don't know what to call this!!

I was watching Rachel Ray the other day and she is a little too fancy for me. But I got the start of an idea from her.
1. Boil noodles 2. Fry up some chicken with salt and pepper (I like to add water to keep it moist) 3. Cut up romain lettuce and tomatoes 4. Mix italian dressing and cottage cheese 5. Mix it ALL together and you have dinner. It was really good. I didn't measure anything so you get to do it by taste!! And you could add in anything else....olives, peperoni, get creative!!

Open Face Turkey Sandwiches

This is simple and delicious. Kristin made it for us when we went to visit and I told her to put it on here, but she said it was too dumb. BUT, I loved it, so here it is.

You simply put turkey on a pieice of bread, sliced tomato on the turkey and then sprinkle it with season salt. Then you sprinkle the whole thing with cheese.
Bake on 350 until the cheese is melted.

Crock Pot Chicken Burritos

4 chicken breasts
1 jar salsa
1 can black beans
Soft tortillas
Shredded cheese
Sour cream

Put chicken, salsa and black beans in crock pot. Cook on low 6 hours. Before serving, shred the chicken and return to crock pot. Place chicken mixture in middle of tortilla with cheese and sour cream. Roll up and enjoy!

Chicken and Wild Rice

5 boneless skinless chicken breasts
1 pkg. Uncle Ben’s long grain and wild rice
1 can cream of mushroom
1 can cream of chicken
1 can cheddar cheese soup
1 ½ c. water
Line bottom of 9x13 pan with foil. Place chidken in pan. Combine all soups and water. Add rice to soup mixture. Pour over the chicken. Sprinlke seasoning pkg over top. Cover and bake. 325° for 2 ½ hours

Cheesy Beef Burritos

1/2 lb. hamburger 2t. chili powder
1 can (15oz) black beans, drained and rinsed
1/2 c. salsa
3/4 c. shredded cheese
4 flour tortillas
1/4 c. sour cream
1 chopped tomato
1 c shredded lettuce

Cook meat and chili powder in skillet. Add beans and salsa; cook 5 minutes or until heated through. Remove from heat. Stir in cheese. Spread meat mixture down centers of tortillas/ top with sour cream, tomatoes, and lettuce. Fold in opposite sides of each tortilla, then roll up burrito-style.

Tortilla Soup

2T. Kraft zesty Italian dressing
2 cloves garlic, minced
2 cans (14 ½ oz. each) chicken broth
1 ½ c. water
3 frozen boneless skinless chicken breasts
1 can tomato sauce
Toppings:
Crushed tortilla chips shredded cheese
Sour cream chopped avocado

Mix dressing and garlic in saucepan; cook on med hi for 1 min. Gradually add broth and water, stirring until blended. Add chicken. Bring to boil. Reduce heat to med-low; simmer 20 minutes or until chicken is cooked through. Remove chicken from broth mixture; Pour broth through a fine-mesh strainer; return broth to pan. Shred chicken; return to pan. Stir in tomato sauce. Cook until heated through.
